Dark Chocolate Cranberry Oatmeal Cookies

Yield: Approximately 4 Dozen Cookies

 

Ingredients

1 Cup unsalted butter

1 Cup light brown sugar, packed firmly

2 Large eggs

1 & 1/2 Teaspoons vanilla extract

1 & 1/2 Cups all-purpose flour

1 Teaspoon baking soda

1/2 Teaspoon salt

1/2 Teaspoon cinnamon

3 Cups old-fashioned oats

1 Cup of dried cranberries

1/2 Bag of dark chocolate chips, about 6 ounces

 

Directions

Preheat oven to 350 degrees. Line baking sheets with parchment paper or a Silpat.

Mix together flour, baking soda, salt and cinnamon. Whisk gently and set aside.

Beat butter and brown sugar together until smooth and fluffy. Add room temperature eggs one at a time, mixing after each egg. Add vanilla and mix again.

Slowly add the flour mixture until combined. Stir in oats, one cup at a time. Do not over mix. Add dried cranberries and dark chocolate chips.

Drop large tablespoons onto lined baking sheets. Bake for 10 to 12 minutes, or until the edges of the cookies are lightly browned. Let the cookies cool a few moments before you move them to wire racks to let them cool completely.
